It’s summer and my family and I are all about fresh fruits, veggies and spending time outdoor. But I still find time to browse the web to get ideas on what to make for the 3 hungry monsters in my family (daughters and hubby). I was looking for a something light, sweet, fresh and well sweet on StumbleUpon.com and I ran into this amazing recipe on Make It & Love It blog.
The pictures alone made me hungry and after reading the ingredients I knew is gonna be a hit with my little ones (I mean it has gelatin and what kid doesn’t go nuts after jello?).
So yes I did try it, I made it yesterday as a welcome gift for my dad who came by for my youngest birthday party (that will be tomorrow FYI). Just as I thought it was a mega hit with everyone even with my husband who repeatedly assured me that I CAN NOT COOK !

What you will need:
- 8 oz bag of Pretzel (I use the gluten free kind because I am Celiac)
- 6oz package of Strawberry flavored gelatin
- 8oz package of Cream Cheese
- 1 cup butter (the original recipe called for 3/4 cup but I really love my butter and figured why not a whole cup:) )
- 1 lb fresh strawberries (you can use frozen but why would you do that in the middle of summer?)
- 1 cup and 5 tbs sugar (or more if you really have a sweet tooth)
- 1 carton heavy whipping cream (or just get a tub of cool whip and spare yourself the beating)
Once you get all your ingredients ready here are the quick and simple steps to get this heavenly desert made (should not take you more than 20 minutes)
Preheat oven to 400F. In a bowl mix 2 cups boiling water and the package of 6oz gelatin and stir until dissolved. Set aside to cool off.
In a 9 x 13 pan mix together 8 oz CRUSHED pretzels, 5 tbs sugar and 1 cup melted butter. Press mix together into the bottom of pan and bake for 7 – 10 minutes.
Remove pan from oven and let it cool off.
In a large bowl miz 8 oz cream cheese, 1 cup sugar and 3 cups cool whip (or whipped cream) and pour the mixture over the cool pretzel dough made before. Place pan in the fridge.
Slice up 3 cups of strawberries (or more if you wish) and mix them with the gelatin. Set in fridge just long enough to allow the gelatin to thicken. Pour thickened gelatin and strawberries mixture over the cream cheese layer and put back in the fridge.
When gelatin gets solid you may serve it to your guests and family. You can garnish it with a spoon of cool whip like in the pictures below. Enjoy!
